For the sherry vinaigrette

1⁄2 cup minced shallots

2 garlic cloves, minced

2 cups vegetable oil

1 tablespoon sweet smoked paprika

1 cup sherry vinegar

2 tablespoons extra-virgin olive oil

2 tablespoons kosher salt

For the salad

1 head red oak lettuce

1 head Little Gem lettuce

1⁄2 cup green beans, blanched or raw

1⁄4 cup baby Ruby Streak mustard greens

1⁄4 cup Sylvetta arugula or regular arugula

1⁄4 cup pea tendrils

1⁄4 cup pumpkin seeds, toasted

4 radishes, very thinly sliced

Kosher salt and freshly ground black pepper

1 ounce ricotta salata cheese, shaved with a vegetable peeler
